An alternative Christmas dinner
Dry the turkey paired with a too heavy red wine purchased online. A slab of smoked salmon with a glass of Pinot Grigio and Christmas pudding with brandy is enough for any wine connoisseur in a frenzy.
This year, why not make the celebrations a little more special by mixing traditional and contemporary cuisine and wine. Be sure to use wine as a condiment to food to improve both the dish and leave the dish to enhance the wine
The line up of traditional wines usually includes a line of champagne before reaching the table, maybe a glass of sherry from the grandmother, a line of white wine with fish boot, a red wine with turkey and wine Christmas pudding dessert.
Well this year I decided to make wine the traditional line up in your head. The following menu begins with a dessert wine for the entr? Then booting Fizz, a primary red of Lebanon and ending with a glass of sherry!
Go to try something new, I am sure that not only loves, but that is a real Christmas memory.

The long ripening season Cafayate Valley Torrontes enables? Grapes used to make this rich, grapey dessert wine achieve full maturity with a consequent increase in levels of natural sugar. The wine is cool fermented in stainless steel tanks and bottled young.
Starter
I love smoked salmon, but it's so predictable. So throw the lemon (lemon kills most white wines anyway) and be bold.
Make a classification of hot smoked salmon served with Thai sweet chili sauce, served with Graves-Lax traditional dill and mustard sauce, and smoked trout with nothing more than a few capers and fresh tarragon. Butter Infused Top it off with a seared scallop in lemon chervil and finish with a handful of sea salt crystals and a few currants and a bit of crusty white bread.
For wine in the last Fizz some, but not as you know it! Go to Ros? Fizz routine for the budget conscious, Codorniu Pinot Noir Brut Ros? Ava, or if your budget stretches then the Duval Leroy Brut Ros? Should exclusively online.
The excitement rose, especially Bruts is an enigma. You get all the sweet notes and soft delicate aromas of berries juxtaposed against the astringency and mouth feel of butter Brut classic white. With delicate, fresh fish and delicate herbs - it is a marriage made in heaven.
The addition of salt - in the capers and sea salt enhances the flavor of sweet berries and flowers even more. Finally, the dulce de chile (and not use too much) make the palate more receptive to the flavors and dry starts. The buttery texture of the mouthfeel of butter and scallops are divine. In fact, with every bite the wine will change in subtle ways and work with each different dish in perfect harmony, despite having four different meats and seven different flavors in a dish.
Cava made from 100% pinot noir grapes are macerated slightly after stripping in order to obtain a pale pink color of the skins before pressing. Bottle-fermented and aged for a minimum of nine months, this delicious Spanish sparkling wine is full of summer, ripe fruit flavors and comes in a clear bottle quail? Gothic.
Ros? Hampagne is delicate and well rounded with aromas of cherries and currants. Made from Pinot Noir and Chardonnay, much of the color of wine made from Pinot Noir grapes grown in the Cross first class and the people Vertus brilliantly called Bouzy. This is a beautiful salmon pink color ros? Ature more than two years in bottle.
Main Dish
Turkey is an import from the states of Christmas and a recent invention, not to leave us, but it seems too dry and it takes too long to cook, why ruin Christmas with the family for cooking all the time?
I prefer the traditional meat and do not take time to cook (except for some training on the eve of Christmas). Try a Beef Wellington or Woo, Cooper, Rush, cake Grunt (wild venison, pigeon, wild hare and wild boar). Both take just 30 minutes to cook in the day.
If you want a big bird, roast a goose or a pair of ducks that I feel much better than Turkey.
For the pasta to add some spice to season (allspice or mixed spice) in batter and served with a port or mustard and Madeira sauce - Do not forget to add plenty of seasonal herbs and garlic to the vegetables roasts and take the roast goose grease and put everything together to save on washing.
For wine, have you tasted a wine of Lebanon? The country has been growing grapes and winemaking in the valley Bekker over 5000 years - much longer than in Europe - we are really talking about "Old World".
I recommend the P Hocher? et Fils Red Ch? au Musar, Bekaa Valley (11.43) or the Red Castle Gaston Hocher Musar, Bekaa Valley, 2000 (20.60).
Both are savory red. If you think the European fruit wines often reflect traditional flavors (blackberries, plums, black currant, etc.). Now imagine Lebanon fruits (dates, figs, raisins, currants, damsons, nuts, spices mixed) These wines also mirror the fruits. So if you imagine all the rich, warming comforting tastes and smells of Christmas and had to put it in a liquid, here it is!
The perfect Christmas wine red, with the richest and excellent price. I call it Christmas in a glass.
Dessert
I love the taste of a holiday dessert - a chocolate log cake and a hot bite.
But after all the previous courses, simply do not have the stomach for them. So I prefer something lighter, but with all the rich flavors. It is not easy.
The only dish I've found to offer everything I want, without feeling like a whale later, Mess Xmas (like Eton Mess, but much more Christmas). It is also so easy to make.
Breaking a small Christmas Pud, some minced meat pies, a few pieces of chocolate cake into small pieces and add the raisins and chocolate broken. Lightly mix with a little vanilla ice (the one with real vanilla beans in it), some very hard whipped cream and finally add some broken meringue. Generously drizzle some nectar from Gonzalez Byass, Pedro Xim? Z Sweet (from 11.71) over all and serve.
As you have it on the dessert would be a shame not to serve in a glass too. Pedro Xim? Z is in fact a sherry. So why serve a glass of sherry for dessert? Well, the only way I can describe this wine is to ask you to imagine the difference in taste between a tomato and a normal dry. PX grapes (as it's affectionately known) are dried in the sun before pressing. This makes so much sweeter and intensifies the flavors, so imagine a sun-dried dessert wine!
When it has not spilled molasses-colored wine. The flavors however are like a figgy pudding liquid. Nectar by name and by nature and deserves the gold medal
Made from 100% Pedro Xim? Z, one of the two main varieties of sherry. PX produces an intensely sweet, good Spanish wine for dessert., With a bunch of raisins and dried figs, is delicious when poured over ice cream with fruit salad or nuts - Serve cold. The Nectar Byass Gonzalaz - won gold at the International Wine Challenge 2009 and silver at the International Wine & Spirit Competition 2009.
